ALOO POHA

Ingredients :

Thick puffed rice - 1 cup
finely chopped onions - 1
finely chopped green chillies - 3
salt to taste
lemon juice - 1 tbsp
fresh grated coconut - for garnishing
chopped coriander leaves - for garnishing
turmeric powder - 1 tsp

For tempering :

oil - 2 tbsp
mustard seeds - 1 tsp
curry leaves - 5-6
jeera - 1 tsp

Method :

1) Put the poha in a strainer and show it running water, washing it nicely. keep it aside for 10 minutes. Once the water has drained and the poha has puffed up, show it under running water once more, keep it aside for 15-20 mins.
2)  In a pan take oil, splutter mustard seeds, jeera and curry leaves
3) add the onions, turmeric powder and saute till transculent
4) add the green chillies, salt  and saute well
5) add salt and the puffed rice and mix well, cook for another 5 mins till the mixture is blended well
6) add lemon juice, mix well
7) garnish with fresh grated coconut and coriander leaves.
