CHILLI PAROTTA
Ingrediemts :
frozen parotta (preferably lachcha or malabar parotta) - 3
ghee - for dusting the parotta
onion - 1 cubed and 1 sliced
tomatoes cubed - 1
ginger garlic paste - 1 tsp
chilli powder - 1 tsp
garam masala - 1 tsp
salt to taste
coriander leaves - 1 tbsp
mixed frozen vegetables (carrot, peas, corn, beans) - 1/2 cup
chopped capsicum - 1/5 cup
tomato ketchup - 2 tbsp
oil - 1 tbsp + 1 tbsp
Method :
1) in a pan, take oil and fry the cubed onions, add ginger garlic paste, saute till it turns brown
2) add the chilli powder, garam masala, and saute well.
3) grind it along wiht the cubed tomatoes, coriander leaves and tomato ketchup
4) in a another pan, add oil, add the sliced onions and chopped capsicum
5) saute till it turns pink, add the frozen vegetables, salt and saute well
6) add the ground paste and mix well.
7) in the meaantime, cook the parottas with the ghee and cut it into cubes
8) add the parotta cubes in the onion mixture and mix well. if needed add little water and cook till the water dries.
9) serve hot with onion or boondi raita
