VEGETABLE RAWA UPMA

Ingredients :

Semolina dry roasted till dark pink - 1 cup
onions chopped fine - 2
carrots grated - 1/2
cabbage grated - 2 tbsp
green peas - 3 tbsps
water - 3 cups
ghee for garnishing
salt to taste

For tempering :

ghee - 2 tbsps
mustard seeds - 1 tsp
chana dal - 1 tsp
urad dal - 1tsp
hing - 1 tsp
green chillies chopped - 3-4
ginger mashed (can be removed once the flavour has come into the upma)
turmeric powder (optional) - 1 tsp
curry leaves - 10
cashew nuts chopped - 6-7 nos

Method :

add ghee in  a non stick pan, add the mustard seeds
when it splutters, add all the ingredients for tempering
saute onion till it becomes dark pink
add all the vegetables and saute well, add salt
add the roasted rawa and saute for 1/2 minute
add hot water and keep stirring well till the water has evaporated (make sure no lumps are formed)
remove the ginger piece
add ghee on top for garnishing.
serve hot

Another way of eating the upma is you can grease a cup with ghee instead of garnishing on top. put the upma into the cup and press slightly. Turn the cup upside down in a plate, have it hot

there is a restaurant in Fort on the way to the stock market which serves upma by the inverted cup method and it tastes yummy.....
