KHAASTHA KACHORI

Ingredients :
For the filling :
moong dal soaked for 4 hours - 1/2 cup
green chilli-ginger paste - 1 tbsp
salt to taste
amchur powder - 1 tbsp
garam masala or pav bhaji masala - 1 tsp
besan - 2 tbsp
oil - 3 tbsp
oil for frying

For the outer covering :
maida - 1 cup
salt to taste
melted ghee - 3 tbsp
cumin seeds - 1 tbsp

Method :
add the ingredients for the outer covering in a wide vessel, add little water and make a tight dough

Mixture :
in a pan take oil and add the strained moong dal and saute till it becomes a dry course powder (this may take about 20-25 mins). make sure this is done on a medium flame
add salt, garam masala, chilli ginger paste and the besan and fry for another 3-4 mins till it becomes a dry mixture



To proceed :
take a tennis ball size dough and roll it to puri size
put 1 tbsp of the filling and seal the sides to form a modak
roll the modak and make it flat
roll out slightly again to less then a puri size (it should be rolled once on each side)
fry these in oil.




These kachoris can be had plain with green chutney or sauce. you can also try this : place the kachori in a plate, make a hole in the centre, put 1-2 tbsp of curd, add green chutney, sweet chutney, cumin powder, chaat masala and sev

you can even make the kachoris and keep them in the freezer and fry it when you have guests at home
