BRINJAL RICE

Ingredients :

Basmathi rice - 1 cup
ghee - 2 tbsp
brinjals cut into small cubes - 1/2 cup
oil - 3 tbsps
salt to taste

To make into a powder :
Coriander seeds - 4 tbsps
chana dal - 3 & 1/2 tbsps
red chillies - 6
methi seeds - 1/2 tsp
asafoetida - 1 tsp
Ghee - 1 tsp

Method :
1) Take a pan and add ghee
2) add the methi seeds and saute till it becomes pink
3) add the coriander seeds, chana dal, red chillies and the asafoetida, saute well till it becomes brown
powder all this and keep aside.
4) cook the basmathi rice with a little salt, do not mash the rice
5) in a wide vessel, add the oil and ghee and splutter mustard seeds
6) add turmeric powder and the urad dal and saute till it becomes light brown
7) add the brinjals, salt and cover and cook till done.
8) add the ground powder as required and mix well, adjust salt
9) switch off the gas and mix in the rice well.

You can also add potatoes instead of brinjals
you can keep this powder for atleast 15 days and use it as required
you can even use this as a curry powder for vegies.
