Before i get the recipe down, I would like to warn that this requires a lot of stirring, so please be prepared!!! you will definitely feel it was worth it.
Ingredients :
Almonds soaked in hot water for 2 hours - 1 cup
sugar - 2 cups
ghee - 1/2 cup
saffron - 1 pinch
milk for making almond paste.
Method :
1. Peel the skin of the amonds and make a paste of the almonds with milk. the paste should not be very loose, you just need enough to make a paste. the paste should be smooth. 1 cup of almonds would give 2 cups of ground paste
2. In a thick non stick pan add the almonds paste and the sugar and start stirring.
3. keep adding ghee as and when you feel the mixture has become dry.
4.add the saffron. keep a plate greased with ghee ready.
5. keep stirring till the mixture starts leaving the side of the pan.
7. pour the mixture in the place and with a flat spatula, smoothen the spread mixture.
8. after 5 mins, cut the burfi into small diamond shaped pieces.
